This might seem like such a boring, nothing, overused meal you’d question why we’re including it BUT, as Kat very well points out and in this day and age, rightly so:
A WHOLE CHICKEN CAN LAST A FAMILY OF 4 3 DAYS IF PREPARED CORRECTLY
Not only that, it is a great way to get kids to eat their veg, get their proteins and fats and fuel full bellies throughout the cold winter months.
The reason this is such a great easy enough meal is that the prep is minimal and it cooks itself. You cannot go wrong with a roast and then after you’ve eaten, save any leftover chicken in a tupperware in the fridge and simmer the carcass and any other bones you want to throw in overnight so you wake up to a glorious broth ready for soups, stocks and more!
Kat makes a point of saying that if she’s planning weekly meals, she will base them around when she has the roast so the next day, she will make the soups (asian chicken noodle is a family fave) and then use the left over chicken to add to pot pie which might involve incorporating a further 2 shredded chicken fillets but there are usually leftovers also for a few small chicken flatbreads for lunches or a chicken egg fried rice (where you can also add in some bone broth for gut warming good stuff)
SO YOU SEE, it can actually be a real saver on spending not to mention everyones getting good quality nutrients and nourishment and its bloody tasty!
A point to also add, if you’re making excess broth and you also have chicken left over, other great ideas are curries and we’ve included a mung bean dahl for the veggies and you can add chicken and broth also into here but if you’re just wanting a veggie option, you can also make a weekly veg broth using up all your leftover veg scraps. Stop throwing everything out. If you keep a scrap bucket, you can easily make up a stock in a mere few hours and store in fridge.

BOTH chicken, beef and veg options are FULL of amino acids, minerals and vitamins so you really should start making your own and doing a weekly food prep so you’ve got it all ready to go!

But here is our ROAST CHICKEN DINNER – You can add yorkies, whatever versatile veg you like and a homemade stock out of the juices and a couple of tablespoons of a good quality organic chicken bouillon, some wine, herbs and flour and you’re set!
