It’s the time of year for what’s in season and also FOR THE HIGH FATS AND BLOOD BUILDING FOODS that support our bodies. If our blood flow is optimal, we will be able to function far better in the colder months so opt for HIGH OMEGA 3 and lots of blood building foods such as BEETS, BEEF, CAYENNE PEPPER, ONIONS, GARLIC AND PUMPKIN SEEDS
And Mackerel (or kippers, whichever you prefer) and Beets just go so well together. It literally takes a little prep on part of the beets as they require some cooking time but other than that, this dish can be ready in 15 mins once you’ve got all together
We like to keep a big batch of beet salad in the fridge and this Russian beet salad version is super yummy and hugely nutrient dense
INGREDIENTS FOR BEET SALAD:
- 4 Large beets
- 1 apple
- Handful of walnuts
- 200g soured cream
- 100g yoghurt
- Splash of apple cider vinegar
- Sea salt, pepper and chopped dill
Simply boil your beets skin on until cooked – about 45 mins. Once done, run under some cold water and you will see how easily the peel slides off them.
Then all you need to do is chop them into pieces and mix with equal sized apple pieces, the walnuts and all other ingredients.
Store in fridge. Simple as that!
Then to prep your mackerel or kippers, simply warm up the fish fillets either on a skillet or in the microwave and serve with a green rocket salad and your beets!
