This is one of the most underrated meals we make in our home. One where we tend to not get too excited cos, ugh, beef stew but then when it’s ready……LITERAL GLOW FROM HEAD, BELLY TO TOE
There are a couple of quirks that I like to add to make it super rich and velvety and really make it feel like the true winter warmer that it is and that it to add:
- A can of Guinness
- A tablespoon of marmite
And it’s one of those dishes that you can prep early, leave and present to a cold, hungry bunch of winter ferals in such a way that brings a bit of decadence to the table
With all the winter seasonal goodness from the beef, onions, carrots, potatoes, gut healthy sourdough biscuits, thyme and garlic it’s a protein packed blood builder for the cold, slow period that’s easy to digest, full of good fats and super tasty
So this is the beyond easy but very versatile winter classic beef stew and we’re going to serve it with sourdough dumplings but, don’t stress, if you’ve not got your sourdough starter ready yet and let’s be honest, it’s a tough time to be trying to cultivate a starter in the midst of winter but still, don’t be defeated because you absolutely can however, if you’ve not got yours brewing, fear not you can still use the recipe as standard to make your dumplings no problem.

If I’m honest, I think if I didn’t put the dumplings in the kids might not take to the meal with the enthusiasm that they do and also being honest, my eldest who is now 14 struggles to still love beef so fishes around a bit but, I know that if its shredded and stewed long enough that it falls apart well she will still get some on the odd mouthful and that’s better than nothing for a fussy teen experimenting with food hang ups
So let’s get straight into the magic!

If you don’t want to add potatoes into the stew directly you can always make a mash or gratin to have on the side. Optional!
